I rarely follow recipes, and when I do, I hardly ever measure, and I usually end up changing ingredients. I believe if you change 3 ingredients in a recipe then it is officially your own! You guys often ask for the recipes in my DM’s, so I decided to put some of my classic faves on my website for you guys to try! Bon Apple Tea! šŸ˜‰

 

Eggplant Mini Pizzas

Ingredients Necessary

1 eggplant

salt

olive oil

pizza sauce (hommade or bottled)

mozzarella cheese

 

Ingredients OptionalĀ 

green pepper

fresh basil

garlic

(or any other things you like topped on pizzas, except pineapple, that shiz is nasty.

 

UtensilsĀ 

baking sheet

parchment paper

vegetable peeler (or paring knife)

spoons/knives

paper towels

 

To start: set your oven around 375 and line your baking sheet with parchment paper for an easier clean up.

Next, Peel your eggplant from top to bottom, discarding the butt ends. Slice into (approx 8-9) 1 inch thick slices. Line them on the baking tray with space in between.

Then, salt the eggplant slices on both sides, and let sit minimum 10 mins-30 mins. The salt will help soak up the moisture in the eggplant, dab with paper towels when done. It is fun to see the end result!

Get ready to assemble! Sauce first, then toppings, and finally the cheese! We usually cut up fresh garlic and basil, and add some green pepper.

Once finished, bake for approx 15 mins, or when cheese is fully melted and starting to look golden like a pizza!

Serve hot, take a photo for evidence that you cooked and ate healthy, and enjoy with your fave Netflix rerun.
